I love TOKAJI ASZÚ. But what can we make from this beautiful sweet wine if we do not want to drink it? Can we use it as a spice? I will show you a great recipe for that.
First of all what is Tokaji Aszú? Its name is originated from the region where it is produced. It is a dessert wine, a typical product of Hungary from Tokaj wine region (Tokaj-Hegyalja). This region is noted for its sweet wines especially Tokaji Aszú. Many wineries produce it but the quality can be very different. One of the most famous winery is the Szepsy Winery. Their sweet wines are world famous. According to legend, the first aszú was made by Laczkó Máté Szepsi in 1630.
The aszú berries are picked, then trampled into a paste and left fo 24-48 hours. The wine is hold in wooden casks where the slow fermentation process is completed , for several years. The Tokaji Aszú is branded as 3 puttonyos, 6 puttonyos… this shows the sugar content of the wine.
So I used this absolutly great wine for my dessert as a spice.

Mascarpone cream with Tokaji Aszú
- 250 g mascarpone
- 150 ml cream
- 100 g powder sugar
- 80 ml Tokaji aszú
- dried grape
Put everything except the dried grape into a mixing bowl and stirr well with a beater. Put the cream into glasses and sprinkle them with the dried grape.
